240 grams Almonds (in brown skin)
240 grams Medjoul Dates (stones removed)
75 grams Raw Cacao Powder
75 grams Goji Berries*
2 tablespoons Yacon Syrup
*An extra decadent substitute is to use Chocodelic Choco Goji Berries instead of the plain Goji berries.
Grind the almonds in a food processor with the ‘S’ blade until they are a fine (but not too fine) powder. Add the cacao powder to the food processor so that it gets evenly distributed throughout the mixture. Add the Goji Berries or Chocodelic and continue grinding until very small pieces. Then add the pitted medjoul dates and continue mixing until you get a sticky lump. Finally add a couple tablespoons of yacon syrup towards the end of mixing, which will ensure the mixture sticks together really well. Press the mixture down well into a square flat bottomed dish approx 20 x 20 cms. The mix should be approx 1cm thick. Cover and place in the fridge to firm up for 1-2 hours. Remove from the fridge and cut into 3 x 3 cms squares and serve. It will have a texture something between a fudge and chocolate brownie, and makes a superior alternative to a store bought snack bar. The suggested variation using Chocodelic, raw choco covered goji berries, adds an extra depth of flavour and richness to what is already total yumminess.
