Recipes: Three Dressings Made With Nut and Seed Butters

It’s easy to make your vegetables festive and delicious using these inspired recipes, created by Chef Nicole!

These dressings which are easy to make in any blender and can be stored in the fridge for a week, are protein-rich and have a very satisfying taste without containing any extra oil.

Sun & Seed Organic Nut Butters provide the base for these recipes. Their premium processes ensure a fine tasting product. First selected nuts and seeds are cleaned and carefully dehydrated to remove all moisture. Then they are stone ground using traditional milling techniques. These two proccesses give a distinctly different flavour than normally roasted nut butters, as well as ensuring an end product free of undesirable microbes!

Red Pepper Tahini Dressing

Makes for a good amount of dressing to drizzle

Ingredients

3 heaped Tablespoons of raw stone-ground white tahini

Juice of half a lemon (add more to taste)

½ a clove of garlic or smoked garlic (optional)

1 fresh sweet red pepper or capsicum (washed and deseeded)

1 Tablespoon of Nutritional Yeast

½ Teaspoon of freshly ground cumin

1 Teaspoon of smoked paprika

A dash of Extra Virgin Olive Oil

Celtic sea salt and freshly ground black pepper to taste

Method:

1.      Place all the ingredients except for the red pepper in a high speed blender, and blend gradually until it reaches a smooth and silky consistency.

2.      After cleaning, deseeding, and chopping the red pepper into large chunks, add it to the silky dressing mix and blend again until the whole mixture becomes red and is of an even consistency again. Make sure that there are no gritty bits.

3.      Add a dash of water or slightly more lemon juice to add moisture if the dressing is too thick.

4.      Taste to see if the dressing needs more seasoning.

5.      Use the dressing fresh as a salad dressing, a sauce for crudités, or simply a spread on raw crackers. Get creative and explore!

6.      When stored in an air-tight container in the fridge, the dressing can be kept for up to a week or more.

Pumpkinseed Butter Dressing

Makes for a good amount of dressing to drizzle

Ingredients

3 heaped Tablespoons of raw stone-ground pumpkinseed butter

Juice of half a lemon (add more to taste)

1 ½  Tablespoons of Yacon Syrup (can be substituted with Maple Syrup or any other low-GI Syrup)

2 – 3 Tablespoons of Nutritional Yeast

1 Tablespoon of White Sweet Shiro Miso (or ½ Tablespoon of dark Miso paste)

A dash of Extra Virgin Olive Oil

Celtic sea salt and freshly ground black pepper to taste

Method:

1.         Place all the ingredients in a high speed blender, and blend gradually until it reaches a smooth and silky consistency.

2.         Add more water or lemon juice to make the mixture smoother if need be.

3.         Taste and adjust if more seasoning is needed.

4.         Use the dressing fresh as a salad dressing, a sauce for crudités, or simply a spread on raw crackers. Get creative and explore!

5.         When stored in an air-tight container in the fridge, the dressing can be kept for up to a week or more.

Sunflower Seed Butter Dressing

Makes for a good amount of dressing to drizzle

Ingredients

3 heaped Tablespoons of raw stone-ground sunflowerseed butter

Juice of a whole lemon (add more to taste)

Juice of a whole lime (optional; add more to taste)

1 generous handful of fresh parsley

1 generous handful of fresh coriander

½  Teaspoon of Yacon Syrup (can be substituted with Maple Syrup or any other low-GI Syrup)

2 Tablespoons of Nutritional Yeast

More than a dash of Extra Virgin Olive Oil

Celtic sea salt and freshly ground black pepper to taste

Method:

1.   Place all the ingredients except for the fresh herbs in a high speed blender, and blend gradually until it reaches a smooth and silky consistency.

2.   After thoroughly washing and patting the herbs dry on a kitchen cloth, roughly chop and add them in increments to the rest of the dressing while pulsing the blender, until it reaches a smooth consistency again.

3.   Add more water or lemon (or lime) juice to make the mixture smoother if need be. Also add more citrus juice if the dressing needs more tanginess.

4.   Taste and adjust to see if more seasoning is needed.

5.   Use the dressing fresh as a salad dressing, a sauce for crudités, or simply a spread on raw crackers. Get creative and explore!

6.   When stored in an air-tight container in the fridge, the dressing can be kept for up to a week.
